Coconut Milk Biriyani
Coconut Milk Biriyani is a simple one pot meal where rice is cooked in coconut milk with some spices. I make this often and a simple raita or dhall curry will do. I personally love the combo of Coconut milk biriyani with Chilly Gobi.
Basmati Rice- 1 cup (Soak for 10 minutes in water)
Bay Leaf- 1
Cinnamon- 2 (1 inch stick)
Ghee- 2 tbsp
Ginger Garlic Paste- 1 tbsp
Coconut milk - 2 cups
Salt- as per taste
Heat a pressure cooker with oil and ghee.
Fry bay leaf, cinnamon, cardamom and clove.
Add green chillies and ginger garlic paste.
Fry well till the raw smell leaves.
Add coconut milk and add salt now.
Add soaked basmati rice and pressure cook for 1 whistle.
Let the pressure come down, give a gentle stir and trasfer to serving bowl.
