Spicy Brinjal MasalaCrunchy tiny pieces of Brinjal drenched in spicy masala. A great combo for roti or rice. Kids would love them too.
Brinjal- 10 nos
Curry Leaves - Few
Oil- 1 tbsp
Chilly Powder- 1 tsp
Coriander Powder- 2 tsp
Salt as per taste
Turmeric Powder- 1/4 tsp
Finely chop brinjal and onion.
Heat oil in a wok.
Fry curry leaves till crisp.
Add finely chopped onions and salt and fry till onion turns brown.
Add finely chopped brinjal and fry till brinjal is cooked and crisp.
Add chilly powder, turmeric and coriander powder.
Stir well to coat the masala well.
Fry for a minute and serve hot with roti or rice.
