Kadala Paruppu Sundal | Bengal Gram Stir Fry

Healthy snacking is very important for maintaining a healthy weight, good metabolism, steady blood sugar levels. Our traditional snacks are much easy to make, healthier, suitable for all and can be made with simple easy ingredients. 

Such a protein rich snack is the Bengal Gram Stir Fry | Kadala Paruppu Sundal. For children, a bowl of Kadala Paruppu Sundal with a cup of warm milk would take care of their hungry tummy and their taste buds.
I now make one sundal variety for evening snack.

Ingredients:

Bengal Gram - 500 g
Water -500 ml
Salt as per taste
Water for soaking
Mustard- 1 tbsp
Curry Leaves- few
Black Gram- 1 tbsp
Green Chilly-2

Method:

Soak Bengal Gram for an hour.
Drain water and place the bengal gram in a pressure cooker with 500 ml water.
Pressure cook for 2 whistles and put off the flame.
Drain cooked bengal gram and set aside.

Finely chop onion, slice green chilly.
Heat oil in a wok and fry mustard and black gram.
Fry till black gram gets golden brown and mustard crackles.
Add curry leaves and green chilly.
Fry them for a minute and add finely chopped onion. 
Add crushed coconut and fry till coconut turns crisp and brown.

Add cooked bengal gram and stir to coat the fried ingredients well.
Serve hot to kids with a cup of milk.
