Belated Diwali Wishes to all. I had a good time with all in family. On Diwali Nov 2 it was my sisters birthday. I wanted to make her something special. As she loves chocolate, I decided to go with a chocolate fudge cake. The plan was to make 2- 9 inch cakes and do a Chocolate fudge frosting.

After the baking was done, my little prince just got hold of 1 cake a grabbed a piece with his tiny hands and munched some. After his approval on taste and his liking, he just took two pieces with both his hands and thats when I spotted him. What else can I do?! I frosted one 9 inch cake for the birthday girl to cut.

All of us were super excited to taste the cake and just ate it right away. I somehow managed to click a slice :). This recipe is to be followed as such. (weight measurements only) as it uses demerera sugar, volumetric measurements may not be favorable.

For the cake 2- 9 inch cakes:

All purpose Flour- 200 g
Butter-200 g
Demerara sugar- 200 g
Almonds- 20 g
Cocoa Powder- 50 g
Milk- 100 ml
Baking Powder- 2 tsp
Vanilla Essence- 2 tsp

For the Fudge:
Butter- 200g
Demerara Sugar- 100 g
Milk- 50 ml

For the cake:

Pre heat oven to 180°C. Line 2 (9 inch) cake pans with butter paper.
Grease the butter paper and the pan with butter.
In a wide deep bowl, place butter.
Beat the butter well with a hand mixer or stand mixer.
Add demerara sugar and beat well till the sugar gets incorporated fully.
Add almond paste (you can powder it as well) and beat it for 2 minutes.
Add eggs, vanilla essence and milk and beat it well.
Add sieved cocoa powder and all purpose flour.
Fold them well to make a homogeneous mixture.
Now pour the batter equally in 2 pans and bake at 180°C for 25 minutes.
Check the center of the cake with the toothpick. If it comes out non sticky the cake is done.

Meanwhile : Fudge

In a double boiler, melt butter.
Add chocolate and let it melt completely.
Add demerara sugar, milk and stir until sugar is dissolved completely.
Chill the fudge in the refrigerator (not freezer) for good 4 hours.


After the cake is completely cool just spread some fudge on one cake and top it with the second one.
Cover the cakes with fudge and cool the cake for an hour or enjoy a slice right away.

PS: I cut the cake when it was a little warm, and hence it was crumbly. But the warm cake with fudge was to die for.
