Baingan | Egg plant | Brinjal is a frequent ingredient of my home. I usually make the Kathrikka Bhajji which is the preferred dish of my husband and son. Idlies get over if this was the side dish. I love brinjals to be crisp and I have a collection of recipes of them HERE. This dish is a quick 2 minute recipe and uses less oil. Have crisp brinjals with Tomato Rice its so yumm.
Baingan | Brinjal -500 g
Chilly powder- 1 tbsp
Salt- as per taste
Oil- 2 tbsp
Wash brinjal well and cut them into slices leaving the top green portion and put them in water.
Heat a tawa with oil (1 tbsp).
Spread brinjal slices evenly as shown in the pic.
Meanwwhile mix salt and chilly powder in a bowl.
When one side gets roasted, turn around and add one tbsp oil.
Sprinkle salt chilly powder mixture and remove.
Note: The crisps gets cooked faster.
