More Curry | More Kuzhambu | More Kuttan
More Curry | More Kuzhambu is a curd aka yogurt based gravy. It has a very rich and creamy texture and taste. Choice of vegetables could be Ash Gourd, Bottle Gourd, Snake Gourd or Yam. But the choice of vegetables is ours. I have used Bottle Gourd.
I love certain combinations only. For More Curry I would love to have Pavakka Poriyal | Upperi (Bitter Gourd Stir Fry) or the Mini Soy Chunks Stir Fry. I can manage it with Bhindi Stir fry too.
Bottle Gourd- 1 cup Chopped
Water 2 cups
Turmeric Powder- 1/2 tsp
Sour Curd - 1 cup
Coconut- 1/2 cup
Cumin | Jeera- 2 tsp
Curry Leaves few
Mustard- 1 tbsp
Red Chilly- 3
Salt as per taste
Wash, peel and chop bottle gourd to 1 inch pieces.
Pressure cook bottle gourd with 2 cups of water with turmeric for 3 whistles.
By the time grind coconut, cumin with little water to make a smooth paste.
After the pressure comes down, open the cooker and keep it on flame again.
Add ground coconut-cumin paste.
Stir it well and simmer for 2 minutes.
Take curd and whisk it with a spoon to make it homogeneous.
Add curd to the cooker and put off the flame right away.Keep stirring for a minute.
Take a tadka pan and add 2 tbsp oil.
Fry Mustard, curry leaves and red chilly.
Add the fried ingredients to the gravy and stir.
