Carrot Chutney

Carrot Chutney is yet another vegetable chutney. All these vegetable chutney are kids friendly dishes that you can just spread them on bread, roti or dosa and make them have it without a fuss. Carrot is vitamin rich and good for a glowing skin too. In this Carrot Chutney the carrots are just half cooked there by enhancing the nutritive value and not much heat treated. Ingredients:

Chopped carrots- 1 cup
Urad dhall/Black gram- 1/2 cup
Garlic- 5 pods
Grated Coconut- 3 tbsp
Green Chillies- 4
Salt as per taste
Oil- 2 tbsp

Method:
Carrot Chutney
  •  Heat oil in a kadai.
  • Fry urad dhall, green chillies, garlic for sometime till urad dhall turns golden brown.
  • Add carrots and cook for just 1 minute.
  • Remove the kadai from heat and let the ingredients cool down.
  • Now grind this ingredients along with coconut salt to a smooth paste.
  • Serve hot with Paniyarams.
