Guys today I am all excited to do this post. Its because I have successfully baked a good cake that too for my uncle-aunt's 25th wedding anniversary. 

Now I have lots to share in this baking because I want you to bake it perfectly without committing the mistakes I did and to note down some important points.



First things first:

If u follow this recipe the yield will be a 2.5kg cake (I measured it to get an idea)
I baked it in Cooker and not oven (my ex-oven blew off and I am yet oven-less)
So the cooking (oops baking!) time for the cake was 90 MINUTES. (I would suggest u get an oven)

Then certain other mistakes done by me and letting u aware of it are:

1. Mixing should be done in a wide and DEEP bowl. I used just wide and ended up cleaning kitchen tiles and had to shift contents to a deep bowl.
2. Be patient not to open the oven/cooker for first 15 minutes. (I was curious and checked often)
3. If your icing please use confectioner sugar OR icing sugar. DO NOT powder regular sugar. You will not get perfect icing. (the powder should be as fine as glucose)
4. Ice your cake after 2 hours of baking MEANING "Completely " cool down your cake or your icing will just melt in front of your EYES. (I iced when the surface was cold but it ended up that the core of cake was still warm and my ICING (cry cry).
5. BE Patient ;)

Things that are mandatory for baking:

1. Patience.
2. Baking sheet.
3. Stand mixer or hand mixer.
4. Measuring cup (best if you have a weighing scale).
5. Baking pan
6. Wide deep bowl.

PS: Oven baking temperature: 350 F.

So the recipe is like this: Measurements on 250 ml cup.

Ingredients:

Maida/ All purpose flour- 3 cups
Butter- 1 cup
Sugar- 1.5 cups (this can be granulated or powdered)
Milk- 250 ml
Eggs- 4
Vanilla essence- 1.5 tbsp
Baking Powder- 1 tbsp
Salt- a pinch

For the butter cream:

Butter- 1 cup
CONFECTIONERS/ICING sugar (only)- 4 cups
Vanilla essence- 1 tbsp
Milk- 50 ml

Method:

  • Take a deep bowl and place 1 cup butter. (butter should reach room temperature).
  • Use a egg-beater attachment of hand mixer and beat till light and fluffy (use speed 1 and 2 mins).
  • Add sugar part by part and keep whisking till a creamy texture is formed (use speed 2 and 3 minutes).
  • Add baking powder, salt, vanilla and 1 egg and whisk (speed 3 and 1 minute)
  • Add next egg then 1 minute for all 4 repeat the same procedure.
  • Add maida and milk and whisk till a smooth batter is formed. (Speed 3 and 4 for 2 minutes)
Before you do these above steps preheat cooker/oven.
Grease baking pan and line them with butter paper.
Grease the butter paper too.

If your making a 2 layer cake (like I have done) divide batter into equal halves in both pans.
Place it in the cooker/ oven and bake till the skewer comes out clean when inserted on the centre of the cake.
For oven temperature is 340 to 350 F.

For the icing:

Same way as before beat butter till fluffy, slowly in corporate sugar till light and creamy, add vanilla essence and milk whisk till smooth.

  • Once cakes are done let them cool completely (2 hours)
  • Place one cake on a plate in which you ll be cutting it (you cannot tranfer later)
  • Spread the icing on top, place the other cake and use all the icing to cover the cake completely.
  • Decorate with gems or nutties chocolate. You can even make designs if u have a icing bag.
PHEW.... Yummy cake ready.......

Tips for cleaning the mess you created for baking the cake:

In a large pot boil water. Drop your spoons spatula whist hooks into the water and take them out using a tong. Your buttery butter is al gone.

Now pour the boiling water in your mixing bowl and all is gone. Then give a regular wash.
