Egg Hakka Noodles

Noodles is everybody's favorite at home. When I make it I do not get any complains and no hassles in finishing it. Now even my achu loves them and is keen on having on his own. I make sure each time I make I add loads of vegetables and since egg noodles is what all prefer I made the egg Hakka Noodles.



Ingredients:

Hakka Noodles- 1 pack (I used Chings)
Eggs- 3
Carrot- 1 cup
Beans- 1/2 cup
Cabbage-1 cup
Onion-1
Garlic- 5 pods
Salt- as per taste
Oil- 4 tbsp
Water for boiling noodles
Soy Sauce- 1 tbsp
Pepper- 1 tbsp

Method:

  • In a kadai boil around 5 cups of water.
  • When the water is boiling well add salt and hakka noodles and cook them for 3 minutes sharp.
  • After 3 minutes, drain the Hakka noodles and wash them in cold water to get rid of starch.
  • Keep the Hakka noodles aside.
  • Meanwhile cut carrots, beans, cabbage into thin strips and measure as per cups measurements mentioned in the ingredients list above.
  • Finely chop onion, garlic and green chillies.
  • Heat oil in a kadai and fry onion, green chillies and garlic.
  • Add vegetables, salt and fry them till crisp.
  • Add pepper and soy sauce and toss them well.
  • Add eggs and scramble them till eggs are cooked and dry.
  • Add the Hakka noodles and toss for 2 minutes till completely mixed.
  • Serve hot with Manchurians.
