Baby Corn Capsicum Stir Fry- Indian Style

For the cold evening have some quick yet yummy dinner. Go for fulka and Baby Corn Capsicum Stir Fry- Indian Style. You will have no complains but only compliments. Even the little ones would love the crunchy corn in Indian masala.


Baby Corn- 1 packet
Capsicum- 1  (huge one)
Tomato- 3
Ginger garlic paste- 2 tbsp
Curry leaves - few
Oil- 3+1 tbsp
Chilly Powder- 1 tbsp
Cumin Powder- 1 tbsp
Curry Masala Powder- 1 tsp
Salt- as per taste
Turmeric and salt- 1 tsp

  • Chop onion, tomato and capsicum into fine pieces.
  • Wash baby corn and rub turmeric salt and keep aside for 30 min.
  • Heat oil in a kadai add 1 tbsp oil add baby corn and capsicum and stir fry till capsicum is crisp and set aside.
  • In the same kadai add 3 tbsp oil add curry leaves.
  • When they are crisp add onion, ginger garlic paste and fry till the raw smell goes.
  • Add tomatoes salt and fry till tomatoes are completely cooked and oil comes out.
  • Add chilly powder, cumin powder and curry masala powder and saute till the raw smell goes and the masala is really homogenous.
  • Just before serving add the crisp capsicum and baby corn and serve hot with fulka.
