Kalan- Kerala Special

On my recent visit to Guruvayoor I tasted the best ever Kalan in a hotel. As I got hold of the recipe way before I made some changes in quantity of ingredients and here comes the best kalan. What I tasted was very thick just like chutney. I wanted more of gravy and this recipe has a little more gravy.




Ingredients:

Yam- 1 cup chopped into big cubes
Pepper powder- 1 tbsp
Water- 2 cups
Salt as per taste
Turmeric- 1 tsp
Coconut- 1 cup
Jeera- 2 tbsp
Coconut oil- 3 tbsp
Curry leaves -few
Mustard- 1 tbsp
Red chilly-5
Thick curd- 1 cup

Method:


Kalan- Kerala Special
  • Pressure cook yam with 2 cups of water, salt, turmeric and pepper for 5 whistles.
  • In a mixer-grinder grind coconut and jeera with some water to make a smooth paste and keep aside.
  • Heat a wok with 3 tbsp coconut oil.
  • Fry mustard ,curry leaves, red chillies.
  • Add pressure cooked yam along with the water.
  • Let it cook well till water drains (retain some if you want more gravy).
  • Add coconut paste and curd and cook for another 3 minutes.
  • Serve hot with brown rice.
