Ghee Rice

Ghee Rice/ Nei Choru is one of my favorite. I had guests coming over and I made it with 2 kg of rice. However I am cutting the ingredients short to make ghee rice with 2 cups of rice. Lets hop into the yummy recipe. The side dish for this was chicken Manchurian (recipe to be updated super soon). Hope you will like it too.


Ingredients:

Basmati Rice- 2 cups
Coconut Milk- 3 cups
Water- 1 cup
Ghee- 1/2 cup
Cashew- 1 cup
Bay Leaf- 2
Star anise- 2
Cardamom- 4
Cinnamon- 2 inch sticks
Cloves-3
Green chilly-4
Red Chilly- 4
Onion- 1
Ginger paste- 2 tbsp
Garlic paste- 2 tbsp
Coriander leaves- 1/2 cup
Mint- 1.2 cup
Salt as per taste

Method:

  • Heat ghee in a pressure pan.
  • Roast cashews in the ghee till they are crisp and brown.
  • Drain from ghee and keep aside.
  • In the same pan add cinnamon, cardamom, cloves, star anise and fry them well in ghee.
  • Add onion, green chillies, salt and fry till onions turn golden brown.
  • Add ginger paste and garlic paste and fry till raw smell goes.
  • Now add water and coconut milk.
  • Check salt and adjust here.
  • Add washed basmati rice and stir gently.
  • Pressure cook for just 2 whistles.
  • When the pressure comes down add mint, coriander and cashews and stir gently.
  • Serve hot with chicken Manchurian.
NOTE: Garnish with fried onion and cashews (optional)
