Bottle Gourd Stir Fry 

Bottle gourd is a rare visitor of my home. It is good for its nutritional benefits and a cooling vegetable for the body. A simple stir fry recipe.



Ingredients:

Bottle Gourd- 1
Curry Leaves- few
Oil- 1 tbsp
Water- 2 tbsp
Green Chilly- 3
Onion- 1

Method:

  • Clean and chop onions and bottle gourd.
  • Heat oil in a pan.
  • Add curry leaves and mustard.
  • Once the mustard crackles add onion.
  • Fry till onions turn golden brown.
  • Add green chillies, bottle gourd, salt and 2 tbsp water.
  • Stir and simmer the flame, cover the pan with a lid.
  • Let it cook for 5 minutes.
  • Open the lid and stir till all water evaporates.
  • Add shredded coconut and stir for 2 mins.
  • Put off the flame and transfer contents to a serving bowl.
  • Yummy Bottle Gourd Stir Fry ready.
