The Lunch menu for today was Rasam and Rice with pappad. So the vegetable dish need to be good. Spicy, crispy, yummy to skip the presence of a gravy. First I thought of making potato fry, then when the kitchen garden had some brinjals handy I thought of trying with those.

Stuffed brinjal fry stuck my mind. The recipe is very simple and the taste is so yum.


Brinjal- 15
Curry leaves- few
Fennel Seeds- 1 tsp
Red chillies- 2
Besan- 1 tbsp
Oil- 5 tbsp

For the Stuffing:

Besan- 2 tbsp
Chilly powder- 1 tsp
Coriander powder- 1 tbsp
Turmeric Powder- a pinch
Garam Masala- 1/2 tbsp
Salt as per taste
Water- 5 tbsp

  • Slit brinjals into 4 and keep aside (Refer Pic)
  • In a bowl mix besan chilly powder, coriander powder, turmeric, Garam masala, salt and water to make a damp past.
  • Stuff the brinjals with this stuffing.
  • Heat oil in a kadai.
  • Fry curry leaves, red chilly and fennel seeds.
  • Add stuffed brinjal and cover with a lid for one side to turn crisp.
  • Turn around the brinjals and add 1 tbsp besan and cook in open flame for around 12 minutes to make brinjal crisp.
  • Serve hot with rasam and rice.
