Onion Chamandhi is a favorite for all Keralites like me. Its best accompaniment for Porridge/Dosha/Idly. This is kerala special. Uli Chamandhi which means Onion chutney. Very simple spicy chutney with coconut oil. The taste is to die for.
Red chillies- 5
Rock salt as per taste
Coconut oil- 1+ 3 tbsp
Chop onions roughly.
Heat 1 tbsp oil and roast red chillies.
Remove them and fry onions with rock salt in the same kadai till onions are golden brown.
Grind roasted chillies to a smooth paste by adding just 1 tbsp of water.
Then add onions to the jar and grind it coarsely.
Transfer contents to a bowl and add 3 tbsp of coconut oil and mix.
Serve hot with Dosha, kanji, idly.
Points to be noted:
- Use of coconut oil is mandatory if you want the real taste.
