Sambhar is a stable food of Tamilnadu. I cook it twice a week at least. This is drumstick sambhar and I love adding carrots to it. This can be had with rice. There is another version for tiffin called as Tiffin Sambhar (will update super soon).
Thoor dhall- 1 cup
Turmeric- 1 tsp
Jeera- 1 tbsp
Sambar powder- 1 tbsp
Salt as per taste
Asofetida- 1 tsp
Oil- 1 tbsp
Curry leaves- few
Mustard- 1 tbsp
Tamarind extract- 1/2 cup
Coriander leaves- few
In a heavy bottom pan add oil, fry mustard, shallots. Let them turn golden brown.
Cook them well and add the cooked dhall mixture. Add water if necessary.
Let smabhar boil for 5 minutes.
Add salt and asofetida now.
Finally add chopped coriander and put off the flame.
Serve hot with steaming rice and potato podimas.
