Carrot Rice

This is a common lunchbox dish of Tamilnadu. Many of my friends bring this for lunch giving me an introduction to this dish. This is a yummy and healthy dish too. Now I make this regularly for my Lunch box. No separate side dish of vegetable required. Just some papad and raitha will do.


Ingredients:

Cooked Rice- 1 cup
Carrot- 2 medium sized
Onion- 1
Green chillies- 3
Red chillies- 2
Coriander- 1/2 cup (finely chopped)
Oil- 3 tbsp
Mustard- 1 tsp
Split urad dhall- 1 tsp
Jeera- 1 tsp
Salt- as per taste

Method:
Carrot Rice

  • Chop onion, carrot green chillies into fine pieces.
  • Heat oil in a pan.
  • Fry mustard, urad dhall jeera.
  • Add onions and carrot and fry them well.
  • Add coriander and put off the flame.
  • Add salt and cooked rice and mix well.
  • Serve hot with raitha.
