Mutton Biriyani- Anganan style

Anganan Biriyani- I am sure Coimbatore people are aware of this. The famous Anganan Biriyani should never be missed if u visit Coimbatore. Even I am a fan of it. My dad loves this so much. I made this for him and is my family's favorite. Here goes the recipe.


Ingredients:

Rice- 4 cups
Onion- 1
Green chillies 4
Cloves- 2
Cinnamon- 1
Cardomom- 2
Pudhina leaves (mint)- few
Ghee/oil- 8 tbsp
Mutton- ½ kg
Saunf- 1tsp
Biriyani leaf- 1
Turmeric- 1 tsp

Grind together:

Garlic- 10
Ginger- 2 inch long
Onion- 1
Green chillies -6
Cinamon- 1
Cardomom- 2
Cloves -2
Cashew nuts- 10

Method:

  • Grind the “grind together” ingredients and keep aside. 
  • Pressure cook mutton for 3 whistles and measure the stock water and keep aside. 
  • Chop onions and slit green chillies.
  •  Take a pressure cooker add oil and ghee. 
  • Fry biriyani leaf, saunf, cloves, cinnamon, cardamom, onion, green chillies, ground paste pudhina and fry well. Add salt. 
  • Now measure the stock and add water to stock and make upto 8 glasses of stock and water. 
  • Add mutton, rice and stock water and close the pressure cooker with the lid. 
  • Let steam come out well put the weight and simmer for 15 minutes. 
  • After 15 minutes let cooker cool down open stir and serve hot with raitha.
  • Yummy mutton biriyani is ready.
