This was the first dish I made after my wedding to my Husband and by all means it was a flop. I did the Kesari in the opposite way. I first made sugar syrup and then added Sooji. Thereby I was challenged to make it perfectly and hence learn it from my grandma and made it good.

If you want to make it perfect too then try this.
Ingredients:

Rava/Sooji- 1 cup
Sugar- 1.5 cup
Water- 1.5 cup
Food color- a pinch
Ghee- 1 cup
Elachi powder- 1 pinch
Cahew- 1/2 cup
Dry Grapes- 1/2 cup
Salt- a pinch

Method:

  • Dry Roast sooji and keep aside.
  • Take a heavy bottom vessel or pan.
  • Pour water and add food color.
  • Let the water boil well.
  • Add sooji/rava slowly and keep stirring without lumps.
  • Now add sugar and keep stirring.
  • Pour ghee and keep stirring till the mixture solidifies.
  • Add elachi powder and put off.
  • Take another kadai and fry cashw and dry grapes in ghee.
  • Add to kesari and mix well.
  • Grease a tray with ghee and pour hot kesari.
  • Allow to stand for 10 minutes.
  • Serve hot.
