Hello all.. Welcome to today's recipe Inji Puli which is a dish made with tamarind, jaggery and ginger. This is a traditional dish of Kerala without which a "Sadhya" is incomplete. So let see how to prepare this wonderful dish.



Ingredients

Tamarind- 2 lemon sized balls
Ginger- 2 big pieces
Green Chilli- 15
Jaggery- 100 g
Salt- 1 tbsp
Hot water- 3 cups
Oil- 6 tbsp

For seasoning:;
Mustard- 1 tbsp
Red Chilli- 3
Curry Leaves- few
Turmeric- 1 tsp
Fenugreek (Optional)- 1/2 tsp

  • Soak green chilli and ginger in normal water for 30 min. 
  • Soak tamarind in 3 cups of hot water for 30 min. Now cut green chillies and peel ginger. 
  • Crush them to a coarse paste as shown in the picture. 
  • Take a kadai and heat it with oil.
  • When Oil is well heated, add crushed ginger and green chilli and fry them for 3 minutes. 
  • Now extract tamarind paste (just crush tamarind well with hand and pour the extract be filtering the tamarind) and add it to the kadai and let it boil for 15 min. 
  • Now Crush the jaggery and add it the kadai, add salt and turmeric now.
  • NOTE: once jaggery is added the inji-puli begins to thicken quickly, hence simmer the flame and stir in between to avoid charring. When it thickens well for another 5min in simmer flame, put the flame off.
  • Now take another kadai and fry mustard, curry leaves, red chilli and add to inji puli and stir.
  • Let the inji puli cool down completely. Store it in an air tight container. Has a shelf life of 60 days.
