Hello all.. First of all my apologies for not being online yesterday.. My son was down with fever and was very cranky. I could not make it to see you all..
So today I shall post more... This recipe is about a 2-in-1 brinjal varuval/kuzhambu which means fry cum gravy..
The recipe is for brinjal fry and by 2 more steps you can make it to gravy... 


 Ingredients:

1. Grind together 5 garlic and a piece of ginger and 3 green chillies
2. Grind together 2 tomatoes and one onion to a smooth paste

Other ingredients

Onion- 1
Chilli powder- 1 tbsp
Coriander powder- 1 tbsp
Salt as per taste
Brinjal- 1/2 kg
Tamarind extract- 1/2 cup
Oil- 5 tbsp
Coconut milk- 2 cups (for making gravy)

Method:

  • Slice onion and cut brinjal and soak in water to avoid darkening.
  • Now take a kadai, add oil and fry sliced onions.
  • Add the ground masalas till the raw smell goes.
  • Now add brinjal, turmeric and chilli powder, coriander powder and salt.
  • Add tamarind extract and allow to boil and thicken.
  • When the gravy has become thick add 1 tbsp of oil and fry well.
  • Brijal fry ready.

2 in 1 brinjal varuval/Kuzhambu
To make brinjal Gravy:
  • Add 2 cups of coconut milf to the brinjal fry and cook for 2 mins. (Do not let coconut milk boil).
  • Coconut milk- 1 cup first milk and 1 cup second milk.
  • Yummy brinjal gravy ready.
