Mixed Vegetable Manchurian

This recipe will be quite useful for us to use all left over vegetables. When I gazed at my refrigerator there was a 1/2 cabbage, tiny cauliflower, a capsicum, half carrot, 5 beans and a tiny broccoli. To use it up all at one go I decided to try out Manchurian recipe and it came out good with fulkha.. so here goes the recipe..


Onion 2 finely chopped
ginger garlic paste – 3 tbsp
Green chilies 5 finely chopped
Vegetables of your choice- 1 cup
Tomato ketchup - 3 tbsp
Chilly garlic sauce - 2 tbsp
Pepper powder- 1 tbsp
Soy sauce - 1 tsp
Vinegar - 1 tsp
Salt as per taste


Pour 3 tbsp of oil to kadai and heat well. Add green chillies and roast them well, add ginger garlic paste and fry them well, add onions and fry them too, add vegetables, salt and pepper and fry them well without water until they are crisp (do not cover them with a lid as the vegetables will become soggy). Once all vegetables are half cooked and crisp, add sauces and vinegar mix well and serve with roti, naan or fulka... yummy recipe and all left over vegetables used up.
