Egg Rice

This dish is a yummy lunchbox dish. And if your really worried about the left over rice, here u go making this wonderful dish and using up all your left over rice.



Ingredients 

Cooked rice - 2 cups
Onion- 2
Chilli powder- 1 tbsp
Turmeric Powder- 1/2 tsp
Salt asper taste
Eggs- 4

Method:

  • Finely chop onion. 
  • Take a tawa, place it on high flame. Add oil. 
  • Once the oil is heated up add onion and fry well till golden brown. 
  • Add chilli powder, turmaric powder and salt. 
  • Fry well till the raw smell goes. 
  • Add eggs and scramble them well till all moisture dries up. 
  • Egg scrambles should be almost crisp. 
  • Now simmer the flame, add rice and little oil and fry well till the rice is coated with egg and crisp. 
  • Put off the fire and add corinder leaves (optional) and mix well.
  • Serve hot with Raitha.
