Broccoli Stir Fry

Ingredients:

Broccoli - 1
Onion - 3
Green chillies - 2
Curry Leaves- Few
Egg - 2
Oil- 2 tsp

Method:

Take florets of brocolli and blanch* them and keep asaide. Peel onions, wash them and chop into fine pieces. Slit clean green chillies lengthwise. Take a kadai, add 2 tsp oil. When the oil gets heated well, add onion and curry leaves. Fry well, add salt green chillies, blanched broccoli and stir and cook for 5 mins (no need to add water). Now add eggs to the above and cook well till eggs are completely cooked. While stirring eggs, simmer the flame. Once the eggs blend well to the broccoli swich off the flame. Serve hot with roti. It can be had as a evening snack. A very nutritious and tasty dish.
